Zaatar veggies

These sautéed veggie with falafel, feta, and tzatziki make the perfect quick meal. I love using precut and frozen veggies to make a dinner easy! And I always talk to patients and clients about having these on hand, especially frozen veggies which are usually cheaper, and frozen at peak freshness so they retain their nutritional value.

1/2 cup veggie stir fry blend (can use any precut blend or frozen veggie blend)

4 frozen falafel

2 tbsp feta

1/4 cup vegan tzatziki dip

1 tsp zaatar


1. spray a large pan with olive oil over medium heat

2. add stir fry veggies and and sauté for 10 mins, stirring constantly

3. add zaatar and falafel

4. top with feta and tzatziki and enjoy!
