15-minute shrimp tacos using 6 Trader Joe’s ingredients

This is an easy protein-rich lunch that only takes 15 minutes to make using just 5 ingredients from Trader Joe's! Featuring my favorite Trader Joe's item: the Argentinian red shrimp. This meal is about to be your new staple lunch, forget ordering out when you're in a hurry and make this instead!

ingredients

1 package (9 oz) argentinian red shrimp from Trader Joe's

4 corn tortillas

1 cup cabbage slaw

5.3 oz nonfat plain greek yogurt

1/2 cup pepita salsa from Trader Joe's

recipe (makes 2 servings)

  1. defrost shrimp in the fridge a few hours before prepping or defrost in a cold bowl of water for 10 mins

  2. while the shrimp defrost, mix greek yogurt with 1/4 cup pepita salsa and mix until creamy (option to add 1-2 tbsp water to make sauce a thinner consistency for drizzling

  3. in a pan over medium heat add shrimp and the juices and butter from the package, and cook for 6-8 mins while constantly stirring shrimp to cook evenly

  4. heat up the corn tortillas on the stove until warmed and crisp on the outside

  5. build the taco by adding a generous spoonful of yogurt sauce to the warm tortilla, then add a half full of cabbage slaw, a second spoonful of sauce and top with pepita salsa

  6. roll up and enjoy!

prep time: 15 mins

nutrition per serving (2 tacos): 472 calories, 40g protein, 40g carbohydrate, 15g fat, 5g fiber, 900mg sodium.
