viral jennifer aniston salad

This is the perfect spring salad in my opinion. There’s mint and parsley which make this salad taste so fresh, plant-based protein in the pistachios and chickpeas, and crunch with the cucumber!


The salad itself is also really flavorful so you don’t need a strong dressing, just a simple lemon and olive oil is perfect.


I love a recipe that’s easy to meal prep. I separated this salad into a few mason jars to bring for lunches this week! Try the recipe below.

ingredients

2 cups arugula

1/4 diced red onion

1/2 cup chopped cucumber

1/4 cup fresh chopped mint

1/4 cup fresh chopped parsley

1/2 cup garbanzo beans

1/4 cup pistachios

1 cup cooked farro

1/4 cup feta

2 tbsp olive oil

juice from 1/2 lemon

1 minced garlic clove

salt and pepper

recipe (makes 1 serving)

1. in a small mixing bowl, whisk together olive oil, lemon, and garlic

2. add all vegetables, herbs, nuts, and feta to a medium bowl

3. drizzle dressing over salad, toss to mix and enjoy!
