sweet and spicy chili crunch salad with peppers and cucumber

This salad is the perfect balanced snack, high in fiber and protein and FULL of flavor. The combination of the chilis with the everything but the bagel seasoning and ginger dressing is perfect. Thankful for Rachel Kirckonell for sharing this combination! Eat this on its own or use it as the base for a meal.

ingredients

1/2 cup chopped mini sweet peppers

1/2 cup chopped mini cucumbers

1/2 cup chickpeas

1/4 cup ginger dressing (I used Makoto ginger dressing)

1 tsp Trader Joe's everything but the bagel seasoning

1 tsp chili crunch (I used Momofuku chili crunch)

juice of 1/2 lime

recipe

  1. chop cucumbers and mini sweet peppers

  2. add the chopped veggies to a tupperware container along with dressing chickpeas, ginger dressing, everything but the bagel seasoning, chili crunch, and lime juice

  3. cover the tupperware container and shake to coat veggies and chickpeas with seasoning

  4. plate with a few extra dabs of chili brunch and enjoy!

prep time: 15 mins

nutrition per serving: 375 calories, 11 g protein, 26 g carbohdrate, 19 g fat, 8 g fiber, 1345 mg sodium
