copycat sweetgreen salad

I finally perfected this sweetgreen copycat recipe! It’s not a salad option on their menu but it’s my go-to build your own salad with kale, tofu, spicy broccoli, tomatoes, bread crumbs, parmesan, and spicy cashew dressing.


This dressing alone deserves a moment because it’s amazing. I highly recommend making it to use throughout the week as a dressing, marinade, or dip!

salad ingredients

1/2 cup quinoa

1 cup broccoli florets

1/2 cup chopped tricolored carrots

3/4 cup cubed tofu

2 tsp sesame oil

1 pinch red pepper flakes

1 tbsp tapioca starch

1 pinch Trader Joe’s umami seasonings

1/2 piece of wheat bread

2 cups chopped kale

5-6 cherry tomatoes

2 tbsp shredded parmesan cheese


spicy cashew dressing ingredients

1/3 cup cashews

1/4 cup olive oil

1/3 cup water

2 tbsp coconut aminos

2 tbsp nutritional yeast

1 tsp sesame oil

1 tsp minced garlic

1 tsp fresh ginger

1 tbsp sriracha

recipe (makes 2-3 sercings

1. preheat oven to 375F

2. boil a pot of water and cook quinoa

3. to a sheet pan lined with parchment paper add broccoli florets, tricolored chopped carrots and tofu

4. spray veggies and tofu with avocado oil

5. drizzle sesame oil over broccoli and carrots, and sprinkle red pepper flakes

6. add tapioca starch to tofu and mix to fully coat tofu

7. season veggies with red pepper flakes and season tofu with umami seasoning

8. place into the oven for 30-40 mins until veggies and tofu are crispy

9. tear whole wheat bread into crumb-sized pieces and place onto a sheet pan, bake in the oven until toasted (~10 mins)

10. add all of the ingredients for the dressing into a blender and mix until one liquid consistency

11. build your salad starting with 2 cups kale (I massaged the kale first with some olive oil and the spicy cashew dressing), then add 1/2 cup quinoa, 1 cup broccoli, 1/4 cup carrots, 5-6 cherry tomatoes, 2 tbsp bread crumbs and 1 tbsp parmesan cheese

12. drizzle with spicy cashew dressing and enjoy!


prep time: 1 hour

nutrition per serving (salad + 2 tbsp dressing): 590 calories, 16g protein, 41g carbohydrate, 37g fat, 12g fiber.
