breakfast bowl with ranchero bean quesadillas

Another breakfast bowl! It's so easy to get in the habit of making the. same. breakfast. every. damn. day. Mix it up with a breakfast bowl - this one is full of vegetables (sans leafy greens), protein, and cheesy quesadilla triangles to dip.


Just spread a thin layer of greek yogurt to the bottom of a bowl, add the vegetables and soft boiled eggs, top with a creamy dressing and cilantro, and eat with quesadilla pieces to dip. It's the perfect recipe for a filling and delicious breakfast. Super easy to make and portable to bring with you to work.

ingredients

1 container nonfat plain greek yogurt

1 hard boiled egg

1 6" corn tortilla

1/4 cup shredded cheddar cheese

2 tbsp beans (I used Siete vegan ranchero beans)

1/2 diced red bell pepper

1/2 cup chopped cucumber

1/2 cup chopped cherry tomato

1/4 cup cubed avocado

2 tbsp diced red onion

1 tbsp hot sauce or salsa (I used Trader Joe's green dragon hot sauce)

1 tsp lime juice

1 tbsp fresh cilantro

a pinch of sea salt

recipe:

  1. bring a pot of water to a boil, add eggs and cook for 10 mins

  2. remove eggs and place in ice water

  3. add beans and cheddar to one side of a tortilla and fold in half

  4. add the tortilla to a pan sprayed with olive oil over high heat

  5. heat for 2 mins until tortilla is golden brown and crispy, flip and cook for another 2 mins

  6. slice quesadilla into 4 triangle pieces

  7. plate salad by adding 3 tbsp greek yogurt to the bottom of a bowl in a thin layer

  8. add raw vegetables to the bowl with yogurt (red bell pepper, cucumber, tomato, red onion, and avocado)

  9. dice the egg and place on top of the vegetables with a pinch of sea salt

  10. add quesadilla pieces to the side of the bowl for scooping

  11. make the spicy cream sauce by mixing the remaining greek yogurt with hot sauce and lime juice

  12. drizzle sauce over the vegetables, egg, and quesadilla pieces

  13. top with fresh cilantro, use a piece of quesadilla for scooping, and enjoy!
