It's Saturday night and I decided that instead of cooking dinner, we're sharing a dinner board of focaccia, mozzarella, mini cucumbers, multigrain crackers, peaches, artichoke hearts, and fresh basil and thyme!
I highly recommend this if you need to throw something together quickly and need a change in your dinner routine.

ingredients
8 oz marinated mozzarella
1/2 roasted tomato and parmesan focaccia from Trader Joe's
10 mini cucumbers
10 whole wheat pita crackers
6 artichoke hearts
1 peach
3 fresh basil leaves
3 sprigs fresh rosemary
1 tbsp olive oil
recipe (makes 10 servings)
preheat oven to 350F
place focaccia on a baking sheet and place into the oven to toast for 5-10 mins
take focaccia out of the oven, let cool, and then cut focaccia into squares and place on a cutting board lengthwise
then add mozzarella, mini cucumbers, crackers, sliced peach, and artichoke hearts
drizzle with olive oil, top with fresh basil and roand enjoy!
