edamame salad with spicy tahini dressing

This salad colorful, crunchy, protein-rich and dairy-free! It's also really easy to make and takes less than 30 mins. The dressing is the real star of the show here, it adds tons of flavor and depth. It's made using the cayenne flavor of Nooch nutritional yeast plus tahini and thyme.

ingredients for the salad

1 cup arugula

1/2 cup edamame

1/2 cup cucumber, chopped

1/2 cup baby potatoes

2 tbsp sesame sticks


ingredients for the dressing

2 tbsp tahini

1 tbsp olive oil

1 tsp nutritional yeast

1 tsp tamari

1/4 tsp minced garlic

1/2 tsp white wine vinegar

1 pinch fresh crushed thyme

recipe

  1. bring a pot of water to a boil and add potatoes, cook for 15 mins or so until soft enough to easily pierce with a fork

  2. while potatoes boil make your dressing by whisking together tahini, olive oil, nutritional yeast, tamari, minced garlic, white wine vinegar, and fresh thyme

  3. let potatoes cool and cut them in half

  4. fry 1 egg on a pan over medium high heat

  5. plate your salad starting with arugula, then add potatoes, edamame, cucumbers, and sesame sticks

  6. add your dressing and mix

  7. top with the fried egg and a sprinkle of fresh thyme, and enjoy!
