I saw this recipe posted by Something Nutritious and immediately ran to the grocery store to get tofu and kale and it did not disappoint!
the secret to getting a crispy tofu is adding potato starch before baking in the oven, but I had never crumbled tofu before and it was amazing - I have officially found my new favorite tofu.
ingredients
1 14oz package of firm tofu
2 cups loosely chopped dinosaur kale
2 tbsp potato starch
1 tsp sea salt
1 tsp garlic powder
2 tbsp olive oil
2 tbsp caesar dressing
1 tbsp butter
1/3 cup frank’s red hot sauce
1 tsp maple syrup
2 almond flour tortillas

1. preheat oven to 350F
2. crumble firm tofu into thick pieces and lay flat on a sheet pan
3. spray the tofu with olive oil, add potato starch, sea salt, and garlic powder and toss to coat
4. place in the oven for 25-30 mins until crispy
5. wash, rinse, and loosely chop dinosaur kale
6. add 1 tbsp olive oil to kale and massage with your hands until kale is soft and coated with olive oil, then add your favorite caesar dressing
7. in a small mixing bowl, add butter, buffalo sauce, and maple syrup
8. take tofu out of the oven and drizzle with the maple buffalo hot sauce
9. place 2 almond flour wraps on a plate, add 1 cup kale caesar and 1/2 cup buffalo tofu on top of wraps
10. add sliced avocado, roll everything up into the wrap, cut in half and enjoy!
