zucchini crisps with whipped feta dip

I've created the most satisfying balanced snack for you! It's baked zucchini crisps with a whipped feta dip. Once you try this whipped feta there's no going back - it's so addicting and refreshing. I've been adding it to wraps, using it as dressing, and now as a dip!


They're definitely best fresh out of the oven. Hope you enjoy xo

ingredients (makes 4 servings)

2 zucchini, sliced into 1/4" thick pieces

1/4 cup feta

2 tbsp chobani greek yogurt

1 tbsp lemon juice

1 tbsp fresh dill

2 eggs

1/4 cup AP flour

1/4 cup bread crumbs

1/4 cup parmesan cheese

recipe

  1. preheat oven to 350F

  2. take each piece of zucchini and dip it into egg wash, then into AP flour, then back into egg wash, and lastly into breadcrumbs

  3. place on a sheet pan and sprinkle with parmesan cheese

  4. spray with olive oil and place into the oven

  5. bake for 15 mins and then flip the zucchini over to the other side, spray with olive oil, and place back into the oven for another 15 mins

  6. while the zucchini cooks place the feta, dill, greek yogurt, and lemon into a blender

  7. pulse until one smooth consistency and pour into a serving dish

  8. take out the zucchini crisps, plate with more fresh dill, dip into feta dip and enjoy!
