summer bean dip
This refreshing bean dip is my own take on a recipe my mom makes in the summer, but she usually uses Italian dressing which I’m swapping out for this Trader Joe’s green goddess dressing (which is my current dressing obsession).
This is one of the easiest recipes to make: open cans of black beans, corn, and chickpeas, and add tomatoes and dressing and voila! Serve with tortilla chips and enjoy.
1 can black beans
1 can corn
1 can chickpeas
1.5 cups chopped tomatoes
1/4 cup green goddess dressing
2 tbsp fresh cilantro
1 bag of cassava and coconut tortilla chips
recipe (makes 10 servings)
1. place all ingredients into a large mixing bowl
2. toss to coat in dressing and mix
3. serve with tortilla chips (and maybe a margarita) and enjoy!
