This salad is crunchy, filling, and easy to put together for a quick lunch! Make sure to chop the cucumber and green bell pepper into small pieces, and then add feta, parsley, and crushed pita chips and toss.

1 small green bell pepper, diced
1/2 cucumber, diced
1/2 cup canned chickpeas
2 oz feta
1/4 cup fresh parsley
3/4 cup whole pita chips (I used Stacey’s parmesan garlic and herb)
1 tbsp olive oil
juice of 1 lemon
1/4 tsp black pepper
add diced cucumber and diced bell pepper to a medium-large salad bowl
drain and rinse canned chickpeas and add to salad bowl with veggies
crumble feta and add it to salad along with fresh parsley
pour out 3/4 cup Stacey’s pita chips, crush into smaller bite-sized pieces, and add to salad
drizzle olive oil and lemon juice over salad
toss salad to mix, season with black pepper, and enjoy!
