pita chip salad with feta and parsley

This salad is crunchy, filling, and easy to put together for a quick lunch! Make sure to chop the cucumber and green bell pepper into small pieces, and then add feta, parsley, and crushed pita chips and toss.

1 small green bell pepper, diced

1/2 cucumber, diced

1/2 cup canned chickpeas

2 oz feta

1/4 cup fresh parsley

3/4 cup whole pita chips (I used Stacey’s parmesan garlic and herb)

1 tbsp olive oil

juice of 1 lemon

1/4 tsp black pepper


  1. add diced cucumber and diced bell pepper to a medium-large salad bowl

  2. drain and rinse canned chickpeas and add to salad bowl with veggies

  3. crumble feta and add it to salad along with fresh parsley

  4. pour out 3/4 cup Stacey’s pita chips, crush into smaller bite-sized pieces, and add to salad

  5. drizzle olive oil and lemon juice over salad

  6. toss salad to mix, season with black pepper, and enjoy!
