peach burrata salad

Updated: Jul 28, 2022

This is a salad recipe is for my people who don’t like traditional leafy green salads. It’s full of fresh fruit, veggies, and herbs making it so refreshing and nutritious! It’s a twist on a traditional peach burrata salad, inspired by a recipe from Half Baked Harvest.

Enjoy this on its own, or pair with fresh bread and protein to make a complete meal! Hope you love it xo

2 peaches (sliced into wedges)

1/2 cup cherries (pitted and sliced in half)

1/2 cup cherry tomatoes (chopped)

4 oz burrata

3 sprigs fresh basil

2 tbsp pine nuts

2 tbsp balsamic vinegar

1 tbsp olive oil

1 tsp red pepper flakes

salt and pepper to taste

recipe (makes 2 servings) adapted from Half Baked Harvest

  2. top with fresh basil leaves and burrata

  3. cut burrata cheese in half

  4. drizzle with balsamic vinegar and olive oil

  5. add a sprinkle of pine nuts and red pepper flakes
