baked apple cinnamon oatmeal

i was craving something warm and cozy on this cold boston morning from home and decided to make baked apple cinnamon oatmeal to meal prep for the week. i've made variations of this baked oatmeal before using blueberries, but I decided on apples and cinnamon with pecans for something different and it did not disappoint!


oats, pecans, and apples are all high in fiber making this a great choice for breakfast. save the rest in the fridge to eat throughout the week or pair with vanilla ice cream for a yummy dessert!


bonus: your home will smell like cinnamon and happiness.

ingredients

1 cup oats (I used Purely Elizabeth original oats)

1 cup chopped apples (about 1.5 full apples)

1 tsp cinnamon

1 tsp baking powder

1/2 tsp sea salt

1/2 cup unsweetened applesauce

1/4 cup maple syrup

1 tbsp coconut oil

1 tsp vanilla extract

2 tbsp pecans


recipe

  1. preheat oven to 375F.

  2. to a large mixing bowl add oats, apples, cinnamon, baking powder, sea salt, applesauce, maple syrup, coconut oil, vanilla extract, and 1 cup water (if you like a firmer oatmeal use 1/2 cup water instead of 1 cup).

  3. spray an 8"x 8" baking dish and pour in apple oat mixture.

  4. top with sliced apples, pecans, and a sprinkle of brown sugar if desired.

  5. bake for 50-60 mins, let cool and enjoy!

optional pairings include greek yogurt, fruit, and pecans.
