mozzarella tomato pita pizza

20-min lunch today is this pretty pita pizza (say that 3 times in a row)! Bake in the oven for 10 mins and plate with a side salad for a simple and delicious meal.

ingredients

1 whole wheat pita

3-4 slices mozzarella

4-5 slices heirloom tomato

2-3 tbsp pesto

1 tbsp balsamic glaze

fresh basil leaves

recipe (makes 1 serving)

1. preheat oven to 375F

2. lay pita flat on a sheet pan lined with parchment paper

3. add 1 tbsp pesto to the pita bread and spread to cover pita

4. layer tomatoes and mozzarella alternating every other

5. place into the oven for 10-15 mins until cheese is melted and pita is your desired crispiness

6. take out of the oven and add fresh basil leaves, a swirl of balsamic glaze, and a few more dollops of pesto

7. plate with a simple mixed greens salad and enjoy!
