I'm so excited to share this recipe I created as part of a collaboration with Manitoba Harvest hemp seeds! It's reminiscent of a caprese salad, and the hemp seed crusted tomatoes add a nutty and rich taste.
Hemp seeds are soft, small seeds that are a great source of plant-based protein and omega-3 fats. They're a delicious addition to soups, smoothies, salads, and bowls! Give the recipe below a try. Hope you love it xo
ingredients
1/4 cup organic shelled hemp hearts (I used Manitoba Harvest)
1/4 cup AP flour
1 egg
4 medium green tomatoes
1 tbsp olive oil
5-8 fresh basil leaves
4 oz fresh mozzarella
1 tsp balsamic glaze
recipe (makes 2 servings)
place hemp seeds, AP flour, and whisked egg in 3 separate mixing bowls
cut tomato into 1/4" thick slices (it should amount to 5-6 slices without end pieces)
dip each tomato slice first into egg wash, then into AP flour, back into egg wash, and lastly in hemp seeds
heat a frying pan over medium-high heat with 1 tbsp olive oil
add each tomato piece and cook on each side for 3-5 minutes until hemp seeds turn crispy and browned
plate by alternating hemp seed crusted tomato and mozzarella slices
add a drizzle of balsamic glaze and basil leaves, and enjoy!
