Happy (almost) Thanksgiving! I'm going to share a tip with you on how to approach your Thanksgiving meal...
TIP: make sure there is color on your plate!
Thanksgiving meals tend to be comprised of beige and brown foods like mashed potatoes, biscuits, stuffing, gravy, turkey, etc. And don't get me wrong, these foods are delicious and should be included. But it's really important to think about adding balance and color to your plate, and I've got a delicious colorful recipe below to help you do that.
These glazed carrots are easy to make, just roast them in the oven for 45 mins with a little butter, sugar, cumin, and paprika. Then topped with fresh thyme and pomegranate seeds for even more color and flavor. Scroll down if you need evidence of how beautiful they make a Thanksgiving plate look. Hope you love them! xo
ingredients
10 rainbow carrots
1 tbsp melted butter
1/2 tsp sugar (can use cane sugar or brown sugar)
1/4 tsp paprika
1/4 tsp cumin
2 tbsp fresh thyme leaves
1/4 cup pomegranate seeds
recipe (makes 2 servings)
preheat oven to 425F
wash, dry, and peel carrots
lay carrots flat onto a sheet pan or casserole dish
in a small mixing bowl whisk together the melted butter, sugar, paprika, and cumin
drizzle butter mixture over carrots and toss to coat
place into the oven for 40-45 mins (toss carrots once or twice during cooking to ensure they get evenly cooked!)
take out of the oven, sprinkle with thyme leaves and pomegranate seeds, and enjoy!

nutrition per serving: 204 calories, 3g protein, 25g carbohydrate, 6g fat, 10g fiber.
