egg in a bell pepper breakfast sandwich

This egg in a bell pepper is such a fun twist on a traditional breakfast sandwich! Made with goat cheese, red bell pepper, chives, avocado, arugula, vegan mayo and sriracha on a whole wheat english muffin. The bell pepper ring keeps the eggs in place and fits an english muffin perfectly. Give the recipe below a try!


1 english muffin (I used stone and skillet)

1 tbsp goat cheese

1 red bell pepper

1 pinch fresh chopped chives

1 egg

1/4 avocado

1 handful arugula

1 tsp vegan mayo

1 drizzle sriracha

salt and pepper to taste


1. cut bell pepper halfway through the red bell pepper making 1, 1/2” thick ring and set aside

2. dice the remaining bell pepper and add to a bowl with goat cheese and chives

3. add 1 egg to the bowl and mix all ingredients together

4. on a pan over medium heat add 1 tbsp olive oil and place your bell pepper ring face down

5. pour egg mixture into bell pepper ring and cover on medium heat

6. cook for 5-8 mins until eggs are cooked

toast the english muffin and spread mayo on one side

7. add arugula, avocado and bell pepper ring with egg

8. drizzle with sriracha, sprinkle salt and pepper, top your sandwich with the other half of the english muffin and enjoy!
