citrus caprese salad with crispy quinoa

This is a twist on a caprese salad using oranges and avocado. The crispy quinoa adds a delicious, high protein crunch to any salad but especially this one! It's refreshing and so simple to make, plus these COLORS.

1/4 cup quinoa

1 oz mozzarella

1 cara cara orange

1/4 avocado

1 medium tomato

1 tbsp olive oil

1 tbsp chopped fresh rosemary

pinch of salt and pepper


  1. preheat the oven to 400F

  2. cook quinoa according to package instructions

  3. add 1/4 cup quinoa to a small sheet pan so the quinoa are in one flat layer

  4. spray with olive oil and place into the oven to bake for 40 mins until crispy and golden brown

  5. peel the orange using a small paring knife

  6. cut both the orange and tomato into 1/4" thick slices

  7. plate the orange and tomato slices alternating each

  8. add slices of avocado and then top with pieces of mozzarella

  9. add crispy quinoa to the top of the salad and enjoy!
