chickpea lentil curry

This chickpea lentil curry filling is so delicious and an easy meal prep option! Made with lentils and chickpeas, and whatever veggies you have on hand. I ate this for curry on its own for dinner one night, and then used it as a filling for these lettuce wraps the next day for lunch!


I used the precooked lentils from trader joes, so all you need to do is throw the ingredients into a bowl and mix together to make the curry! This lentil curry is vegan, gluten-free, and full of fiber and protein. Try the recipe below.

ingredients for lentil curry (makes 2 servings)

1/2 cup steamed lentils from Trader Joe’s

1 cup brown rice (use 90 sec bag of rice)

1 can chickpeas

2 cups roasted vegetables (I used broccoli, bell pepper, red onion, and tomato)

1/4 cup thai style yellow curry sauce from Trader Joe’s

2-3 sprigs fresh parsley

1. pour all ingredients into a large mixing bowl

2. toss to coat in curry sauce

3. eat on its own or serve in lettuce wraps with shrimp/chicken!
