burrata salad with pesto and sundried tomatoes

Have you ever used pesto as a dressing before? Trust me when I see it is ELITE. Try this burrata salad with pesto, sundried tomatoes, roasted chickpeas, avocado, cucumber, and fresh parsley. It only takes 15 mins to make.

1 tsp olive oil
1/4 cup chickpeas
1/2 tsp paprika
1 pinch sea salt
1.5 cups mixed greens
1 tbsp pesto
1/2 cup diced cucumber
1/4 cup sundried tomatoes
1.5 oz burrata
1/4 tsp black pepper
1 tbsp fresh parsley
juice of 1/2 lemon
add olive oil, paprika, and a pinch of sea salt to chickpeas and toss to coat
place chickpeas into an air fryer at 390F for 12 mins until crispy (or at 375F in the oven for 25-30 mins)
plate mixed greens in a bowl with pesto and toss to dress the salad
add diced cucumber, sundried tomatoes, avocado, and roasted chickpeas to salad
add burrata to the center of the salad and top with an extra drizzle of pesto
sprinkle fresh parsley and black pepper to salad along with a squeeze of lime, and enjoy!
