I have to give Sarah Martel, RD credit for this delicious sandwich made with shredded tofu. It's ridiculously good and she's an absolute genius for grating tofu and baking it! I first saw the recipe on tiktok and immediately went to the store to get ingredients to make it.
The tofu ends up looking and tasting like crispy hash browns (scroll down for evidence!). You just add bbq sauce and place it inside of a bun with some veggies. It's hearty, easy to make, and so filling. Give it a try with the recipe below. Hope you enjoy xo
ingredients
16 oz extra firm tofu
1 tbsp olive oil
1 tbsp soy sauce
2 tsp chili powder
1/2 tsp paprika
1/2 tsp minced garlic
1/4 cup bbq sauce (I used primal kitchen)
1/4 cup water
4 small pretzel buns
1.5 tbsp vegan mayo
10 pieces lettuce
1 medium tomato, sliced
recipe inspired by @savourwithsarah (makes 4 servings)
preheat oven to 350F
shred the block of tofu using a cheese grader
mix shredded tofu with olive oil, soy sauce, chili powder, paprika, minced garlic, and toss to coat
place seasoned tofu on a large sheet pan lined with parchment paper
cook in the oven for 15 mins, take tofu out and toss it, place back in the oven to cook for another 15 mins
add bbq sauce and water to a pan over medium heat, stir and heat until mixed, around 3 mins
add baked tofu to bbq sauce and toss to coat
divide bbq tofu into 4 even portions and plate each portion on a bun
add mayo, lettuce, and tomato to eachother complete the sandwich, and enjoy!
