baked zucchini pizza with burrata and basil


I've been craving more comfort foods as we're heading into fall and this one absolutely hit the spot. It's reminiscent of a fried eggplant pizza but there's nothing fried about this recipe! First bake the zucchini separately, then build your pizza using homemade pizza dough. Roll out the dough and add pizza sauce, then layer shredded mozzarella, burrata, tomatoes, zucchini, and fresh basil. The KEY to making a homemade pizza mouthwatering is to add a drizzle of olive oil and a sprinkle of parmesan when it comes out of the oven. Hope you love it! xo



ingredients

1 zucchini, sliced into 1/4" thick pieces

2 eggs

1/4 cup AP flour

1/4 cup bread crumbs

1/4 cup parmesan cheese

22 oz (or 623g) fresh pizza dough

2, 4 oz burrata balls

8-10 oz pizza sauce

4 oz shredded mozzarella cheese

5-8 cherry tomatoes, sliced in half

5 sprigs fresh basil leaves

1 tbsp olive oil

1 tsp red pepper flakes

recipe

  1. preheat oven to 350F

  2. take each piece of zucchini and dip it into egg wash, then into AP flour, then back into egg wash, and lastly into breadcrumbs

  3. place on a sheet pan and sprinkle with parmesan cheese

  4. spray with olive oil and place into the oven

  5. bake for 15 mins and then flip the zucchini over to the other side, spray with olive oil, and place back into the oven for another 15 mins or so until crispy

  6. while the zucchini cooks, roll out your dough onto a pizza pan (I coated my hands in olive oil before doing this to prevent it from sticking!)

  7. add a thin layer of pizza sauce to pizza dough

  8. top with mozzarella cheese, tomatoes, baked zucchini, burrata, and basil

  9. preheat oven to 425F

  10. place pizza into the oven and bake for 20-25 mins until dough is cooked all the way through and pizza edges are crispy

  11. add a drizzle of olive oil, a sprinkle of parmesan cheese, red pepper flakes, and more fresh basil

  12. cut pizza into 6-8 slices and enjoy!
